Serves: 8-ten servings

Ingredients

  • one butternut squash (approximately three lbs.), cubed into one inch parts
  • three Pink Lady apples, peeled and cubed into one inch parts
  • two tablespoons of butter, melted (or ghee, or vegan butter)
  • two tablespoons organic brown sugar
  • one/4 teaspoon ground cinnamon
  • one/4 teaspoon ground nutmeg
  • one/two cup walnuts, approximately chopped
  • one/two cup dried tart cherries (or cranberries)

Guidelines

  1. Preheat oven to 400 degrees (F) and line a large baking sheet with parchment paper.
  2. Spot the cubed butternut squash and apples in a large mixing bowl.
  3. Drizzle with melted butter, then sprinkle with organic brown sugar, ground cinnamon and ground nutmeg. Toss to coat carefully.
  4. Pour the contents of the bowl onto the parchment lined baking sheet, and use a spatula to distribute it out in an even layer.
  5. Bake for 35 minutes, stirring after. At the finish of the baking time, pierce one-two parts of squash with a fork, to guarantee it is gentle. If it is not gentle, bake an further 5-ten minutes.
  6. Include the approximately chopped walnuts and dried tart cherries and bake an further 5 minutes.
