  • one cup cilantro, chopped

For the heat corn salsa

  • one purple onion, medium
  • one purple chilli
  • one cup cilantro/coriander
  • four cloves garlics, divided
  • lime juice, from ½ lime
  • four tomatoes, substantial
  • salt to taste
  • one tbsp olive oil
  • two cups frozen corn

Add-ins

  • one or two bag of tortilla chips
  • Cotija cheese (or tender feta as a substitute)
  • sour product
  • cherry tomatoes
  • avocados/guacamole
  • spring onions
  • environmentally friendly chilli, sliced

Guidelines
